We brush our fresh truffle, removing only the thickest layer of soil that surrounds it; this is because the soil residues form a natural protection that helps preserve its aroma.
The truffle must be washed thoroughly with a brush under running water, and only when actually using it.
Next, cut thin slices (using the appropriate truffle slicer) directly over the hot plate: the heat will release all its flavour.
To best preserve fresh truffles, it is important not to wash them in advance, as the soil residue helps preserve their aroma.
Wrap the truffle in absorbent kitchen paper (such as Scottex) and change it every day as soon as it becomes damp.
Then place the truffle in an airtight container, made of plastic or glass, avoiding touching the walls, and store it in the refrigerator.
In general, truffles last for about 5ā7 days.
The fresh truffle is brushed, placed in special isothermal containers and delivered within 24/48 hours, depending on the destination and the availability of the couriers.
