It is by far the most popular recipe among truffle-based products. Not only because it is the most sold or known, but also because it is the oldest. It comes from central Italy and is characterized by the wide range of uses in the kitchen. The sauce is ready to use and is ideal spread on bruschetta or crostini, perfectly combined with butter, fresh spreadable cheese, fresh cream and parmesan. It can be used for delicious pasta or rice dishes, but no less interesting combined with meat or fish.

Ingredients: cultivated mushrooms (Agaricus bisporus), sunflower seed oil, summer truffle (Tuber aestivum, Vittad.) 3%, salt, flavouring, pepper, garlic

Storage: Store at room temperature away from light and heat sources. Once opened: store in the refrigerator between 0 and 4°, consume within 4-5 days.

How to use: Cold: Use directly. Hot: Heat slightly to preserve the aroma of the truffle. Avoid bringing to the boil.

Chianina Beef Tartare with Truffle Sauce

CHIANINA BEEF BATTUTA WITH TRUFFLE SAUCE, SPRING ONION, LEMON AND MUSTARD

Ingredients for 2 people

  • 320g of chopped Chianina meat
  • 40g of truffle sauce
  • 2 spring onions
  • zest of ½ lemon
  • a few grains of mustard
  • extra virgin olive oil, salt, pepper

Procedure

Beat the meat with a knife and leave it to soften outside the fridge. Season it with chopped spring onion, the grated zest of ½ lemon, extra virgin olive oil, salt and pepper.

Mix the truffle sauce with a spoon and place it on the bottom of the chicken broth and mix it again.

Finish the preparation with the heat off, stirring vigorously. the pasta with the butters and a spoonful of cooking water if necessary. Serve hot and creamy.
