Honey and Truffle Biscuits

Ingredients for about 40-50 biscuits:

  • 100g butter
  • 50g of truffle honey
  • 2 eggs
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 150g sugar
  • 5g baking powder
  • 350g of "00" flour

Procedure:

  1. In a large bowl or on a pastry board, arrange 300g of flour in a fountain shape.
  2. Add the sugar, butter, truffle honey, eggs, spices and yeast.
  3. Knead until the mixture is smooth and homogeneous. If necessary, add the remaining flour up to a maximum of 50g.
  4. Wrap the dough in cling film and leave it to rest in the refrigerator for at least an hour.
  5. Roll out the dough on a pastry board until it is about ½ cm thick.
  6. Use cookie cutters to cut out the desired shapes and place them on a baking tray lined with baking paper, spacing them 2-3 cm apart.
  7. Bake at 180°C for approximately 15 minutes, until the edges are lightly golden.

Advice:

For a more intense flavor, sprinkle the biscuits with a pinch of icing sugar or serve them with a light honey cream.
