



Pure White Truffle Cream is a high-level gastronomic specialty, made with top-quality white truffle. This cream stands out for its velvety consistency and olfactory intensity, characterized by complex and penetrating aromatic notes, typical of white truffle. Ideal for enhancing refined dishes, such as risotto, tagliolini with butter or carpaccio.
Ingredients: 90% Premium White Truffle (Tuber Magnatum Pico), olive oil, salt, flavouring.
Storage: Store in a cool, dry place. Once opened, store at +2/+4 degrees.
How to use: Cold: Use directly. Hot: Heat slightly to preserve the aroma of the truffle. Avoid bringing to the boil.

In a saucepan, melt half the butter and sauté the chopped shallot until transparent.
Add the rice and toast for 2 minutes, stirring continuously.
Blend with white wine and let the alcohol evaporate.
Pour in the hot broth a ladle at a time, stirring frequently and waiting for the rice to absorb the liquid before adding more.
When the rice is almost al dente, add the Pure White Truffle Cream and the remaining butter. Mix well to blend the flavors.
Season with salt and pepper and, if desired, stir in some grated Parmigiano Reggiano.
